This zesty, creamy Avocado Dip is the perfect "5 minutes until your guests are devouring a whole bowl in seconds" type of dip. It's creamy, spicy, smoky and just gosh darn delicious.

Yes, I said gosh darn. Because apparently Google doesn't prefer swear words. But you get my meaning.

Because if you like guacamole you will love this. Period. Unless you don't like bacon. In which case I'm not totally sure we can be friends. And if you tell me next you don't like guacamole, I hate to tell you this...

But it's over.

All kidding aside, this stuff really is awesome. It's SUPER simple to make with just a handful of ingredients. Avocado, sour cream, a little chipotle pepper for some spice and smokiness, lime, fresh cilantro, and of course the much talked about BACON.

This Avocado Dip is just perfect for appetizers at parties, potlucks, and any gathering of people really. Or just eat it hovering over the counter in a hurry before anyone else sees it. To each their own right?

The Ingredients

Avocado dip is not quite the same as guacamole. This avocado dip is lighter and creamier than guacamole. And is has bacon. Yes, bacon. Because you know bacon makes everything better LOL! The ingredients are all easy to find in your local grocery store. See below for some tips on buying avocados.

  • Avocados
  • Sour cream - full fat. period.
  • Chipotle pepper in adobo sauce - these can be very spicy. I've included options for adjusting the spice level in the recipe below.
  • Lime juice - I ALWAY recommend using fresh lime juice. The bottles has a completely different flavor that affect the taste of this dip.
  • Bacon - thin cut works best for this recipe because we want to get it really crispy so it's easier to crumble
  • Cilantro - again, fresh is necessary for this recipe.

How to Choose Avocados

Avocados can be sneaky. I've chosen many an avocado that I thought would be incredible, only to get home and have it be mush. Or hard. That said, here are some tips for choosing avocados in the store:

  1. Gently squeeze the avocado in your hand. It should be pretty firm, but with just a little give.
  2. Look for avocados that don't have blemishes on the skin or soft, mushy spots.
  3. The skin of an avocado can vary depending on the type you are buying. However, you will typically want to look for an avocado with a dark, uniform color.

How to Keep Avocados From Turning Brown

Ahhh, the age old question. There are many tips out there to help prevent your avocados form turning brown. Some say leaving the pit in will help.

Covering the avocado with lemon juice before storing is a common tip that is known to work well. But honestly, I find that my avocados turn brown regardless of what I do.

I personally just store it in a plastic ziplock bag and then eat it when it's slightly brown....which leads to the next question....

Is it ok to eat avocados that are brown? Definitely! The brown will not harm you, it just looks kind gross. You can just eat it plain, or use your brown avocados in dips (like this one), salad dressing, or topping on other dishes.

Step By Step Instructions

First off, when cooking the bacon make sure it gets nice and crispy so it's easy to crumble into small pieces. Set it aside while you finish the rest of the dip.

Place ingredients (except bacon) into food processor and blend until the mixture is smooth and uniform.

Then add bacon and pulse until the bacon is distributed throughout the sauce. You can also just stir your bacon in at the end. If you have crumbled it sufficiently small, it should stir right in.

Expert Tips

  1. To reduce the spice level, use only half of the chipotle pepper, or even just use a tablespoon of the adobo sauce. Then you get the flavor without too much of the spice.
  2. Cook the bacon really crispy so it's easier to crumble.
  3. If you'd like this to be more of a sauce, add additional water and/or cream (if you prefer an ultra creamy texture) until it reaches your desired consistency.
  4. Spice this dip up a bit and top it with crumbled cotija cheese, additional bacon, diced tomatoes (or pico de gallo) or diced jalapeno. Be creative!

Serving Options

Avocado dip is extremely versatile and can be used as a dip or an accompaniment to any dish. Basically, it can be used in any way you would use guacamole. Check out some of these fun ways to use it:

  • Obviously tortilla chips are the first thing that comes to mind and my personal favorite;
  • Dip fresh veggies such as carrots, celery, broccoli or zucchini in it;
  • TACOS! Of course this dip would be amazing on tacos. Try it with these awesome tacos:
  • Pretzels, breadsticks or bagel chips go great as well;
  • Serve it alongside these Pulled Pork Enchiladas or Stuffed Poblanos.

How Long Does Avocado Dip Last?

Bad news guys. This dip will really only be at it's peak for a day or so. While you can eat the brown part, it will start to get bitter after a while which will affect the flavor of your dip. I recommend eating this dip either the same day or the day after. That's never a problem in my house....

Ingredients

  • 2 (medium) ripe avocados
  • ½ cup sour cream
  • 1 whole chipotle pepper in adobo sauce finely minced
  • Juice of 1 lime
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 3 slices crisp cooked bacon, crumbled
  • 3 tablespoons chopped cilantro

Instructions
