Dutch Oven BBQ Chicken
When we went camping a few weeks ago, I was particularly excited about the food we were going to make. My dad always says that everything tastes better in the mountains, and that is a sentiment I agree with wholeheartedly.
I knew that I wanted to make a dutch oven meal that my dad is famous (at least, in my family) for making. We only ever had it when we went camping, and it was something I looked forward to every time. It’s a very simple meal, but it’s full of lots of flavor! This is guaranteed to be one of the best dutch oven chicken recipes out there.
Since we don’t have a camping dutch oven (something I hope to change soon), we borrowed one of my dads and picked up some charcoal from the store before we set out. The hardest part about this dish was getting our coals going well enough so we could actually cook the food. And then, of course, waiting the 50-60 minutes it took to cook. It was torture!
It’s basically bacon, chicken breasts, onions, potatoes, and BBQ sauce. Simple, simple, simple! I found out later that my dad actually puts butter in as well, but we didn’t (because we didn’t know about it), and it still tasted great. It really made me want to do more dutch oven cooking, because it turned out so well.

If you are new to dutch oven cooking, here are a couple of must-have products for dutch oven cooking. Ingredients
3-4 large chicken breasts
1 package of bacon
5 small potatoes, sliced into 1/4 – 1/2 inch slices
1 red onion, chopped
1 lb butter, optional
1 bottle of your favorite BBQ sauce
26 coals
Instructions
Make sure your coals are burning nicely. Place dutch oven on top and put bacon in dutch oven.
Cook bacon until cooked. Drain most of the excess grease (you want to keep probably 1/4 cup in the dutch oven)
Add onions, potatoes, chicken breasts, onion, butter, and BBQ sauce into the dutch oven.
Cover with lid and make sure there are 14 coals underneath the the dutch oven and 12 on top.
Cook about 35-50 minutes, or until the chicken is done.
Notes
This can be made in a slow cooker. Just precook the bacon and onions, and then throw everything in the slow cooker until the chicken is done – about 3-4 hours on high, 4-5 on low.

Barbecue sauce typically contains sugar that will brown faster than the meat. This can make it difficult to tell when the chicken is done. To ensure you don't pull the chicken off too soon, add the BBQ sauce when you're nearly done cooking the meat.
If using a griddle pan, put it over high heat now to get it screaming hot. Use tongs to transfer your chicken breasts onto the grill or griddle pan. For chicken breasts approximately 2cm thick, cook for about 5 minutes on each side, turning every minute and basting as you go, or until golden and cooked through.
For the most part, chicken should be grilled at 350º to 450º F over direct or indirect medium heat. The only exception is when you're smoking the chicken. Often used with wings or whole chickens, smoking meat involves indirect cooking over very low heat, 225º to 250º F, with the addition of smoldering wood chunks.
Roast the chicken for 10 minutes, then brush with more sauce. Return the chicken to the oven and roast for 10 minutes more. Brush the chicken all over again with the sauce.Roast for an additional 10 minutes until burnished and sticky.
You can use either flour or cornstarch to thicken BBQ sauce. Just mix together 2 tbsp (16 g) of flour and ¼ cup (62.5 mL) of water, or combine 1 tbsp (9 g) of cornstarch with 1 tbsp (15 mL) of water. Continue mixing the thickener until there are no lumps of flour or cornstarch.
If you set the temperature extremely high, the chicken won't cook properly on the inside but can burn on the outside. It will cook more thoroughly and evenly with lower heat. Fix: Choose medium heat on a gas grill or medium-low on a charcoal grill to cook your chicken.
When you boil chicken before grilling, the meat becomes softer and more tender. You have to be careful, though, because it's easy to overcook the meat, which will affect its flavor and moisture.
Season the chicken with additional salt and place it on a rimmed baking sheet lined with foil (for easy cleanup).Bake for 30 minutes. Meanwhile, heat a grill to medium-high (about 375 F to 400 F). Remove chicken from the oven and brush with the curried honey-mustard sauce.
The ideal grill temperature range for chicken is between 350 and 450 degrees Fahrenheit. This range is narrowed down by whether you're grilling chicken breasts, thighs, or drumsticks.
Typically, a good rule is to flip your chicken breasts within the first 5 minutes, let them cook for another 3-4 minutes, and then flip them again and cook them until they hit 165 degrees and the juices run clear on the bottom of the breast.”
Cook chicken for 20 minutes, turning halfway through. Baste with sauce, then continue to cook, basting every 10 minutes, until chicken is no longer pink at the bone and the juices run clear, 20 to 25 more minutes.
Focus on searing the meat and then cooking it until it reaches a safe inside temperature at the thickest part. Sauces are best applied near the end of cooking to prevent burning. Only baste it with sauce during the final five minutes of cooking. The taste will blow you away without any burned mess on your grill.
If you're expecting lots of people, this can also speed serving time up. Cooking meat in the oven first can also help you avoid other issues, such as with the BBQ coals not being hot enough or having too much food on the grill.
Do you put BBQ sauce on chicken before cooking? The best time to put the BBQ sauce on is when the chicken is almost ready. If you do it when the chicken is raw, the sugar in the sauce will cause it to brown faster than the meat, and the outside of the chicken can burn.
Place the chicken breasts into a 9x13-inch baking dish, and pour the sauce over the chicken. Turn the chicken pieces over in the sauce to coat both sides. Bake in the preheated oven until the chicken is no longer pink and the juices run clear, about 40 minutes.
