One of my all-time favorite savory things to bake is cornbread! Full of texture, both salty and sweet, there is nothing like homemade cornbread dipped into a big bowl of chili or slathered with my Homemade Butter and a drizzle of honey! Baked in a cast iron skillet and studded with spicy jalapeños and cheddar cheese, this is my Best-Ever Cornbread recipe! Once you give it a try you will never look at boxed cornbread the same way again.

I would also just like to point out to my fellow Bold Bakers that it took me a while to get to this recipe. I had made many, many cornbreads over the years but I was never happy with the results. They were either too dry or not ‘corny’ enough. This is a perfect balance of sweet, savory, and a little kick of heat from the jalapeños.

How do you make moist cornbread?

One of the things that makes this my Best-Ever Corn Bread recipe is the addition of fresh, blended corn. This adds moisture, texture, and sweetness of the blended fresh corn gives the batter an unmistakable amount of flavor and ensures the final bread won’t dry out even a day or two after it’s baked.

To blend the fresh corn I use a food processor, but you can use a blender or do this by hand with a knife. This, in combination with the gooey cheese, milk, and eggs, take my cornbread to the next level!

What if I don’t have a cast iron skillet?

I chose to make this in my GoodCook 10-inch Cast Iron Skillet, as it makes the bread nice and crisp on the outside and makes for a really fun presentation. If you don’t have an oven-safe skillet, you can always bake this in a 9-inch cake tin — and it will come out every bit as tasty!

How long can I store cornbread — and how?

Cornbread is a great make-ahead bread! After you bake the bread off you can store any leftovers in an airtight container at room temperature for up to 4 days, but I highly doubt it will last that long!

What can I add to my cornbread recipe?

I chose to add some kick to this cornbread by adding chopped jalapeño peppers. I love the extra layer of flavor this adds in contrast to the sweet corn and salty cheese. If you don’t like spicy foods, feel free to leave them out.

My Best-Ever Corn Bread can really be dressed up any way you like, I also like to add bacon and chopped green onions for another variation, YUM!

Can cornbread be frozen?

This is a great bread to keep stored in the freezer for up to 8 weeks. I pre-slice the loaf so I can easily grab a slice when the mood strikes me. To thaw the cornbread allow it to defrost in the fridge, then once fully defrosted toast it up or warm in the microwave and enjoy!

I just made your cornbread in a skillet. Though done, I thought it was a bit pale. Hmmm. A few minutes later, I found the melted butter in my microwave. I had omitted all the butter from the recipe! At this point dinner guests were arriving, so I just poured the melted butter over the still-warm cornbread. Everyone loved it. What a forgiving resilient recipe!

Made this today,,, decided to make a “cornbread pizza” I halved the ingredients and used it as a pizza base, let it finish baking and topped with pesto/cheese/mushrooms and put it back in the oven for five minutes. Also realised I had no corn at home and decided to add some finely grated carrot instead (1 small carrot) worked just as well it was incredibly soft.

The recipe indicates 1 Tablespoon of Baking Powder is to be added to the dry ingredients. Thinking this sounded like much too much baking powder, I watched the video and was able to pause at the point where the baking powder was added. It showed that a 1 teaspoon measuring spoon was used. Please clarify this discrepancy.

I made this for a friend who is gluten-free, dairy-free and sugar-free. I used Coconut Milk and gluten-free flour. The recipe already took care of the sugar by using honey. It turned out great and we both loved it. Thank you for this and many other recipes I have used.

Hi Gemma ! This looks exactly like what I need to make to pair with a chili I’m making for a contest. I need to make a lot of it so I was wondering if I can bake it in a large sheet pan or will it not taste as good without the cast iron? Thanks!

FAQs

What does adding an extra egg to cornbread do? ›

The yolk will make the texture more dense and smooth, a bit brownie-like, while the fact that your original batter was too thick means that the additional liquid will help the baking powder achieve better leavening, giving you an airier texture.

What ingredient keeps cornbread from crumbling? ›

I want to keep the cornbread taste, just less crumbly! I recommend extra egg yolk, adding corn, and using cast iron to bake. Also, try a little lower temperature.

How do you keep cornbread from being dense? ›

  1. 1Put in an extra egg yolk. ...
  2. 2Cut back on fat or grease by one third. ...
  3. 3Replace white sugar with a moist sweetener. ...
  4. 4Add 1 tablespoon (15 ml) more butter or oil. ...
  5. 5Replace milk or water with creamed corn. ...
  6. 6Add 1 tablespoon (15 ml) of sour cream.

Why do you put baking soda in cornbread? ›

It makes the batter rise a bit so your cornbread will be light and a little fluffy. If you omit some sort of leavening agent, and baking soda is just one kind, your finished cornbread after baking will be about an inch high, and shall we say, pretty dense.

How do you doctor up boxed cornbread mix? ›

One of the simplest ways is to bring in more flavor and depth is by adding ⅓ cup of sour cream to the batter, which makes the cornbread extra moist and a little tangy. Another tangy option: Add ⅔ cup of buttermilk, which also makes the cornbread super tender.

Should you let cornbread batter rest? ›

1Heat the oven to 400 degrees Fahrenheit. Note: We recommend allowing cornbread batter to sit for 10 to 15 minutes before baking, so if you prefer, you can delay heating the oven until you make the batter. 2Melt the butter, and then set aside to cool slightly.

How do you make cornbread less dry and crumbly? ›

Add in some Flour

If you use straight cornmeal, it will tend to be dryer. Adding in flour will help to keep the cornbread moist. I like to use a 50/50 ratio of cornmeal to flour in my recipe. I feel this gives a moist and fluffier texture.

Is it better to use butter or oil in cornbread? ›

Oil changes cornbread's texture

Using oil will make your cornbread tender and moist while butter will give you heavier bread. Why do you get such different qualities from these fats? This is largely due to the fact that at room temperature, oil is a liquid while butter is a solid.

Can you over mix cornbread? ›

Pour batter into prepared pan. The batter will be lumpy. Overcome the urge to mix until smooth. Overmixing can cause the corn bread to peak and have tunnels, resulting in a tough texture.

What is the best cornmeal for cornbread? ›

As for the best cornmeal for cornbread, either fine- or medium-grind cornmeal is a great choice. Medium-grind cornmeal will bring slightly more texture and grittiness to the batter, which you may or may not want (it's up to you!). You can use fine or medium cornmeal in these extra corny muffins.

Should cornbread batter sit before baking? ›

Cornbread Best Practices:
  1. LET the batter sit for 15-20 minutes before baking. ...
  2. BE gentle!! ...
  3. START preheating your oven as soon as you set aside the batter to rise, by the time it's preheated, your batter should be ready to go in.
  4. HEAT your skillet. ...
  5. SUBSTITUTE regular salt for this amazing Smoked Salt.

Should you let cornbread mix sit before baking? ›

The trick to this perfect cornbread is letting the cornmeal, corn flour, and buttermilk sit overnight; this allows the corn flour to fully hydrate, while the acid from the buttermilk tenderizes the cornmeal, helping to create a tender, almost cakey bread that still retains that slightly gritty texture you expect.

What happens if I put too much baking soda in cornbread? ›

It's important not to use too much baking soda in recipes, as it can result in a metallic, soapy flavor. It is much more powerful than baking powder – you only need about 1/4 teaspoon baking soda per cup of flour to leaven baked goods.

Can you put too many eggs in cornbread? ›

Eggs are responsible for giving baked goods structure, which means the amount you use directly affects the resulting texture. Using too few eggs will make your desserts dense, but using too many will make them rubbery. The explanation for this lies in the fact that eggs are made up of protein.

How does an extra egg affect baking? ›

However, if you add too many eggs to your cake batter, then your end result could be spongy, rubbery, or dense. Like flour, eggs build structure in a cake, so they make a cake batter more bonded and dense.

What does adding an extra egg do to baked goods? ›

The site says that adding too many eggs will also give your cake a noticeably eggy flavor, which will make it taste more like a custard or a bread pudding and less like a cake. Fine Cooking goes on to clarify that eggs and flour work as protein ingredients when baking.

What happens when you add more eggs to a recipe? ›

If you use too few eggs, your cake won't hold together well, but using too many will result in a cake that is more dense, spongy, and rubbery than it should be. Adding just one extra egg is enough to add moisture and richness.
