  • 1/4 cup white onion minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp dried thyme
  • 3 cups beef broth fat free
  • 2 tbsp half and half fat free - AP
  • Coconut Oil Spray - AP
  • parsley Finely chopped for garnish

Instructions

  1. Heat a large pot over medium-high heat and spray with the coconut oil spray.

  2. Add the sliced mushrooms to the pot and sauté for 5-7 minutes, until softened.

  3. Add the minced garlic and onion to the pot and continue sautéing for 3-4 minutes.

  4. Season with salt, pepper, and thyme. Stir in the beef broth and bring to a simmer.

  5. Cover and simmer for 10 minutes.

  6. Remove from heat, stir in the half and half and blend with an immersion blender until smooth and creamy. (Alternatively, carefully transfer the soup to a blender and blend until smooth).

  7. Ladle into bowls, garnish with fresh parsley, and serve.

    This soup was delicious and filling. I swapped out the half and half because I didn’t have it and used 1 tbs of greek yogurt. I also added 1/2 t of psyllium husk powder to make it a bit thicker. That was perfect.

    I love mushrooms and I love this soup!! Fantastic flavor and just what I needed, as I tend to be a little cold on hcg. I didn’t have any nonfat cream, so I added a little coconut oil (doesn’t seem to affect my weight loss on hcg) and it was perfectly creamy. I would eat this after P2!! Thanks!
